The match looked set to end in a draw until Van Dijk found the back of the net in the tenth minute of added time, sparking wild celebrations in the away end at The Hill Dickinson Stadium.
Arne Slot’s side remain fifth in the Premier League table but are now seven points clear of fifth-placed Chelsea in the race for Champions League qualification.
Off the pitch, it has now emerged that Chelsea are one of two Premier League clubs interested in a South American youngster.

The report claims that scouts from several teams, including Chelsea and Liverpool, were in attendance to watch the midfielder feature for Colombia under-17s as they beat Brazil under-17s in the Sudamericano on Thursday.
Jackson, 17, was also said to have been watched by scouts from the City Football Group, Bayern Munich, Borussia Dortmund, Benfica and Atletico Madrid during the match, in which he provided an assist as Colombia cruised to a 3-0 victory.
He has now provided two important assists in the competition, with Colombia set to face Argentina on Sunday evening.
The teenager is currently out of contract following the expiry of his last deal, but the report suggests that a fee will still need to be negotiated with National in order to secure the player’s services.
